Surprise Cookies


Hi and welcome to Adventures in Baking. Chocolate is the name of the game today!  Chocolate cookie, chocolate frosting, chocolate goodness in general.  I have a very limited Internet connection this week so this post is going to be short and sweet!  This is a recipe my aunt sent to me from Martha Stewart called Surprise Cookies.  Her recipes always look too complicated and froofy, but this one was easy. 



The ingredients.  Can't have chocolate cookies without Hershey's Cocoa.  And yes, that's a bowl of marshmallows.  They aren't called Surprise Cookies for nothing!  The instructions call for large marshmallows, cut in half horizontally.  See, that's another one of those useless instructions.  Horizontally?  Really?  Is that with the marshmallow standing on it's flat end or on it's roll-y side? 
Does it really matter?


Let's get started.  In a medium bowl, whisk together flour, cocoa powder, baking soda and salt. 

The next step.  In a larger bowl, cream together butter and sugar until light and fluffy.  Add egg, milk and vanilla and beat until well combined.  Add flour mixture and mix on low until combined. 


The surprise.  Bake.  Remove from oven and place half a marshmallow in the center of each cookie.  Return to the oven for 2 additional minutes. 

Final step.  Make the frosting.  Place confectioners sugar in a bowl.  Whisk in butter and cocoa powder.  Add milk and vanilla and whisk until combined.  Spread over marshmallow.


The taste test.  Speaking as someone who can take it or leave it when it comes to chocolate I have to say these are scrump-dilly-icious.  I kept them in the refrigerator so the chocolate wouldn't melt and they are soooooo good!  Love.  All the reviews from my taste testers have been very good also.  These are a winner!  Not very attractive to look at, but tasty none the less!  Maybe they need a little splash of color on top.  Yeah, sprinkles always liven things up.

Clean up.  The recipe made 26 cookies.  Not too many, but with so much chocolate you can't eat very many either.
